A 316 stainless steel wok is more durable than a 304 model, making it particularly suitable for prolonged high-temperature cooking or use in humid, coastal environments.

Thanks to the addition of 2–3% molybdenum, 316 stainless steel offers significantly better corrosion and heat resistance than 304. While 304 is sufficient for standard household use, 316 is recommended in the following situations:

 

1. Differences in durability
316 is more stable in salty or acidic environments, making the bottom of the pan less prone to rust spots. Experimental data shows that, under identical conditions, the corrosion resistance of 316 is more than 1.5 times that of 304; it performs better during long-term high-heat stir-frying or when stewing highly acidic foods (such as tomatoes or lemons).

 

2. Suitable scenarios
In coastal regions or high-humidity environments with poor kitchen ventilation, 316 effectively resists chloride ion corrosion. In commercial kitchens, where pans are subjected to continuous high heat and frequent scraping, the superior wear resistance of 316 becomes even more apparent.

 

3. Cost considerations
316 stainless steel is typically 30–50% more expensive than 304. If you only stir-fry occasionally and clean the pan promptly, 304 offers better value for money. When purchasing, look for the "SUS316" stamp on the pan body; some low-priced products may only feature a 316 coating on the outer layer.
